cooking: cauliflower crust pizza

It's the first. And seeing as how 'firsts' are usually a big deal*, I'm going to celebrate them here on the blog. Check back every month. On the first. And follow along on the adventure.

This month's 'first' is: cooking cauliflower crust pizza.

That's right. Cauliflower. Back in January, when I was experiencing serious self-imposed pizza withdrawal, someone recommend this 'pizza alternative'. And though I'm only just now getting around to making it (because I usually can't be bothered and I've had a slice or two since), I've been thinking a lot about how it might taste. So here goes.

The ingredients:

For the cauliflower, the rule of thumb I used is 1 head = 3 cups. With that in mind, I removed the stems and leaves from 1 head. Chopped it up. Blitzed it in the Vitamix until it was grainy. (NB: grainy is not the same as a puree; though I will try the puree next time for a change of pace with the texture.)

Once the 'grain' is ready, microwave it on high in a medium (microwave-safe) bowl for 8 minutes. Then, add the egg, oregano, garlics, and cheese. When mixed, pour the 'dough' out onto a non-stick-sprayed or silpat-covered cookie sheet. (FYI: next time, I'm going to use the pizza stone and see what happens.) Drizzle - or brush - with olive oil to taste.

Bake at 450 degrees for 12-15 minutes. (NB: the more thinly spread the 'dough', the faster it cooks.) Then, add your own sauce and ingredients.

Meat-lovers all, we added pepperoni. And more cheese. Crank the oven up to 'broil', and pop the pie back in the oven for 2-3 minutes, or until the cheese is bubbly and brown. (NB: as the final 'ingredients' step is done at a broil, please make sure any ingredients, specifically meats, are already fully cooked first.) Watch the timing on this, too. I left mine a little long.

Tasty! We gave my 'first' attempt a solid 7. Some of us prefer a different texture to our pizza, but could be won over. And some of us are just excited to eat 'pizza'. I will be making this again. Especially as The Husband bought 3 heads of cauliflower.
